Braised Veg Chicken with Longan & Red Dates
Ingredients
200g vegetarian chicken
3 fresh ginger slices
20 red dates, flattened and cored
10 longan
400ml water
Seasoning
1/4 tsp salt
1/2 tbsp soy sauce paste
Method
1. Cut the vegetarian chicken into pieces, then stir fry into preheated dry wok for a while or till fragrant. Remove, keep aside.
2. Heat up 2 tbsp sesame oil to fragrant the ginger slices. Stir in the prefried vegetarian chicken pieces. Add in red dates and longan, stir well. Pour in water and seasoning, bring to boil. Then simmer over a low heat for about 10 mins. Remove from heat.
Sauted Mushroom and Veg Chicken
Ingredients
150g vegetarian chicken balls
6 chinese mushrooms, soaked and cubed
50g fresh ginger, chopped
Sauce
1 1/2 tbsp soy sauce paste & 2 tbsp water. Both mixed well.
Method
1. Stir-fry vegetarian chicken balls in a preheated dry wok till fragrant. Remove and leave aside.
2. Heat up 2 tbsp sesame oil to fragrant the chopped ginger. Blend in mushrooms, stir well. Add in sauce misture and prefried vegetarian chicken balls. Then stirring over high heat until well combined or dry.
Vegetarian Chicken with Black Pepper and Cucumber
Ingredients
150g vegetarian chicken slices
250g japanese cucumber cut into pieces
6 dried chillies, seeded and sectioned
6 stalks baby sweet corns, sectioned
8 straw mushrooms
some shredded ginger
2 tbsp water
Seasoning
2 tsp black peppercorns, crushed
1 tbsp vegetarian oyster sauce
2 tbsp light soy sauce
1 tsp sugar
1 tsp sesame oil
Method
1. Rinse the straw mushrooms and cut into halves, then blench into boiling water. Remove and drain well. Keep aside.
2. Rinse the vegetarian chicken slices and drained. Deep fry into hot oil until golden color. Remove and drain well.
3. Heat up 1tbsp oil into preheated work to fragrant ginger slices and dried chillies. Add in prefried vegetarian chicken slices and seasoning, stir-fry briskly until well combined. Place in the remaining ingredients, cook for a moment or until the sauce is slightly absorbed. Dish up and serve.
