A Little Guy Woking in His Big Kitchen

Tomato & Chilli Chicken

1/2 no (700g) chicken, cut into pieces
300g tomatoes, cut into cubes
1 blade turmeric leaf, sectioned
5 blades kaffir lime leaf

Spices (Pounded)
40g shallots
7 red chillies
20g fresh ginger
10g fresh turmeric

1 tsp salt
3 tbsp calamansi lime juice

1. Heat up 4 tbsp oil, to saute the punded spices over a medium heat till fragrant. Add in chicken pieces, toss well till color changes.

2. Add in cubed tomatoes, stir-fry briskly for a while. Place in sectioned turmeric leaves, kaffir lime leaves and seasoning, stir fry till aromatic. Cover, simmer over a low heat until the gravy is slightly absorbed. Dish up. Serve hot.
