Steam Spare Ribs with Wine and Ginger Paste

200g spare ribs
40g fresh ginger
50ml water

3 tbsp ginger wine
1 tbsp glutinous rice wine
1/2 tbsp sesame oil
1/2 tsp salt

1. Pound ginger and water in the blender until to be finely paste. Dish up. Ready to use.
2. Rinse spare ribs and cut into pieces. Add in marinade, mix well. Marinate about 1 hr.
3. Place the marinated spare ribs pieces on a steaming platter, then top with ginger paste, mix lightly. Steam over high heat in a preheated steamer for 15 mins till cooked thoroughly.
