A Little Guy Woking in His Big Kitchen

Tapioca-Seri-Muka

Ingredients A

400g glutinous rice, washed, soaked for 4 hrs and drained

1 tbsp sugar

1 tsp salt

Ingredients B

300g white tapioca, shredded finely

200ml think coconut milk (100ml thick coconut milk, mixed with 100ml water)

100g caster sugar, 1 tbsp glutinous rice flour

1 drop yellow coloring

Ingredients C

90g rice flour, 90g corn flour

120g caster sugar, tsp salt

200ml thick coconut milk, *300ml pandan juice

Method

1. Combine all A and put into a steaming tray. Pour in water to cover the rice and steam at high heat for 40 mins. Remove, fluff up rice and press into a 7″ (about 3″ height) square tray until firm.

2. Combine all B and pour over steamed glutinous rice. Steam at medium heat for 20 mins. Remove.

3. Combine all C and strain into a saucepan. Cook at low heat until slightly thick. Pour over tapioca layer and steam at low heat for 15 mins.

4. Remove and leave to cool completely before cutting into pieces.

Note

Use 10 pieces pandan leaf and 300ml water and blend until very fine. Squeeze out juice.
