Braised Duck with Yam


1/2 duck, cut into pieces

8 cups oil for deep frying

300g yam, cut into pieces

1 tbsp chopped garlic

1 tbsp chopped shallot


1 tsp salt

1tbsp light soy sauce

dash of pepper

1 tsp corn flour


1 tbsp oyster sauce

1 tsp light soy sauce

1/2 tsp salt

1/2 tsp sugar

dash of sesame oil and pepper

1500ml water

Some shredded spring onion and coriander leaves for garnishing

1. Combine duck with marinade for 1 hr. Deep fry in hot oil until golden brown. Dish and drain. Deep fry yam pieces until lightly brown. Dish and drain.

2. Heat up 1 tbsp oil, saute chopped garlic and shallots until fragrant. Add in duck, yam, seasoning and bring to boil. Lower the heat and simmer until the duck is tender and gravy is thick.

3. Dish up, sprinkle spring onion, coriander leaves on top.
