A Little Guy Woking in His Big Kitchen

Black Bean Sauce

5 shallots, peeled and chopped
2 tbsp chopped garlic
1 tbsp chopped ginger
100g germented black beans, soaked and chopped
2 red chillies, chopped
1 stalk spring onion, chopped
100ml oil
100 water

2 tbsp light soya sauce
2 tbsp oyster sauce
1 tbsp sugar
dash of sesame oil and pepper


1. Heat up oil, saute chopped shallots, garlic and ginger until fragrant. Add in fermented black beans and stir-fry until aromatic.
2. Add in seasoning, red chilli, spring onion and water. Mix well and cook at low heat for 3 mins. Remove from heat.
