A Little Guy Woking in His Big Kitchen

Thai Sambal Paste

10 shallots, peeled and chopped
3 stalks lemongrass, chopped
3 cm galangal, chopped
5 pcs kaffir lime leaves, chopped
4 tbsp assam paste, mixed with 4 tbsp water and squeeze out juice
2 tbsp sugar
1 tsp salt
2 tbsp lime juice
100ml oilMethod
1. Heat up oil, saute chopped shallots until fragrant. Add in lemongrass, galangal, kaffir lime leaves, chilli padi and stir-fry until aromatic.
2. Add in remaining ingredients and bring to boil.

  2. oh without those, it’s quite hard for you to cook sour and aromatic dishes. May I ask which country is dat? Perhaps muslim’s market would sell. Or maybe someone could have planted galangal.
