Savoury Drunken Chicken


Ingredients

1 chicken about 2kg

1 tbsp brandy mixed with 1 tbsp rice wine

250ml rice wine

Method

1. Bring a pot of water to boil. Put in chicken nd bring to boil. Remove the pot from heat, cover and leave to stand for 30 mins.

2. Remove the chicken, rub with salt while it's still hot and leave to cool. Drizzle with brandy and rice wine mixture and chill in refrigerator for 1 day.

3. Cut chicken into pieces, pour in 250 ml rice wine and steam for 5 mins.
