A Little Guy Woking in His Big Kitchen

Golden Pumpkin & Lotus Root in Bowl

Pumpkin was my favourite.


250g pork belly cut into pieces

200g pumpkin, peeled and cut into pieces

150g lotus root, peeled and cut into sections

10g dried shrimps

1 tbsp fermented salted black beans

2 garlic cloves, chopped

2 stems spring onions, chopped

2 red chillies, chopped

300ml chicken broth


2 tbsp light soy sauce

1 1/2 tbsp dark soy sauce

1 tbsp Shaoxing wine


1. Mix lotus root and pumpkin with a little tapioca flour separately. Parboil into hot oil for a while. Remove and drain well. Keep them aside.

2. Leave 2 tbsp oil into the preheated wok to fragrant dried shrimps and chopped garlic. Add in pork belly pieces and light soy sauce, stir-fry briskly until color changes.

3. Add in fermented salted beans, stir well. Pour in chicken broth and bring to boil. Add in rest of seasoning, toss well.

4. Place in prefried sectioned lotus root and pumpkin pieces, stir-fry for a moment. Cover, simmer over a low heat for 20-25 mins until the gravy is slightly thickened. Lastly add in chopped spring onions and red chillies, toss well. Remove and put into bowl.
