Curry Chicken – Manual


Ingredients A

1 Whole Chicken about 1.5kg cut into pieces

5 Potatoes

3 stalks Curry leaves

2 stalks Serai, smashed

2 pcs Asam keping

Ingredients B

3 tbsp curry powder mix with some water

Ingredients C

1.5 liter water

200 ml thick santan

Ingredients D

Dash of salt, sugar and MSG

Spices (Grounded)

20 dried chilli

5 Red chilli

5 cloves garlic

10 pcs shallots

5 pcs buah keras

5g turmeric

40g galangal

1 small piece belacan

Method

1. Skin and cut potatoes ito wedges, then deep fry.

2. Heat 5 tbsp oil in wok and saute grounded spices until fragrant. Add serai, curry leaves, assam keping and B, saute until fragrant.

3. Add in chicken and stir to mix, pour in 1.5 liter of water to immerse the ingredients. Once boiled, turn to low heat and simmer for 5 mins.

4. Add in potatoes adn thick santan, bring to boil and season with D.
