Simmered Chicken with Ginger Root

Ingredients
2 nos (300g) chicken “Kampung” whole legs
250g fresh ginge/ginger roots
1 tsp chopped garlic
1 tsp salted bean paste
400ml water
Seasoning
3 tbsp light soy sauce
1 tsp sugar
Method
1. Cut chicken into convineant pieces and drained. Peel and wash ginger, then flattened lightly. Keep aside.
2. Fragrant chopped garlic with tbsp oil in a preheated wol. Add in chicken pieces and salted bean paste, stir-fry till aromatic. Blend in ginger and seasoning, stir well.
3. Pour in water and bring to boil, simmer over a medium heat for 10-15 mins until chicken pieces are cooked thoroughly, or the gravy is thick.



This was just unreal – I used a little more garlic and took alot more time to reduce to liquid to a gravy but woweeeee – yummmmmmmmyyyyyy
