Glutinous Rice Wine Chicken with Ginger Omelette

Ingredients
2 no chicken “Kampung”, cut into pieces
400g old ginger, chopped finely
4 tbsp sesame oil
700-900ml glutinous rice wine
3 eggs, beaten
400ml water

Method
1. Heat up wok, add in chopped ginger, stir-fry awhile till fragrant. Add in sesame oil to saute till aromatic or golden in color. Dish out half portion.

2. Pour in beaten egg in hot wok and shallow fry with remains of prefried ginger, stir until golden on both sides. Remove and place into serving deep bowl.

3. Transfer the retain fried ginger to the preheated wok, add in chicken pieces and stir-fry until fragrant. Pour in glutinous rice wine, bring to boil and continue cook for a while. Then add water, bring back to boil and cook for 5 mins. Lastly splash in 2 tbsp glutinous rice wine, bring to boil. Remove from heat and pour over to ginger omelette.
