Spaghetti Alle Vongole

Recipe
140 grams spaghetti
500 grams clams in shells
2 ripe tomatoes
2 tbsp olive oil
1 fat garlic clove, chopped
1 small or half of a large fat chili, finely chopped
splash of white wine (about half of a glass)
2 tbsp chopped parsley

Method
Put the water to boil for the spaghetti. Rinse the clams in several changes of cold water. Discard any that are open or damaged. Cover the tomatoes with boiling water for 1 minute and peel the skin. Deseed the tomatoes and chop into small pieces.

Cook spaghetti in boiling water as per instructions on the packet. Meanwhile heat up the oil and add the garlic and chilli, then fry gently for a few minutes. Stir in tomatoes, clams, white wine, salt and pepper and bring to a boil. Cover the pan and cook until clams are opened i.e approximately 3 to 4 minutes. Drain pasta and tip into pan to mix with parsley. Dish up and serve.

Dark Soya Sauce Pork


I’m refering this in summary with permission from Food Haven. This was my favourite when I was a kid where my mum would cook occasionally. Kids love it. Tender and lean meat is adviseable. My mum would use pork oil as it’s more aroma.

Recipe
* 300gms pork fillet (the part near the kidney which is the most tender) cut into tiny strips or thin slices
* Season with 2 tablespoonslight soya sauce, 2 tablespoons dark soya sauce, 1 tablespoon sugar and lots of pepper.

Method
Put the seasoned pork into the wok and let it simmer for a while. This will force the juice out of the meat. Then add some oil, AFTER the meat is partially cooked. If you like a bit of gravy, add a little water if too dry. But it tastes better with not too much gravy.

Then, when the pork is cooked, taste and adjust accordingly. Add more dark soya sauce and sugar if it is not black enough. It has to be shiny black to taste oomph.

Extra Notes
Others recommends adding some star anise to makes it more fragrant. Others suggested good quality dark sauce is Cap Orkid.

The Bus

Tom: Teacher, teacher; is the bus is male or female?
Teacher: Hmm… (Thinks…)
Johnny: It’s female
Tom: But y Johnny?
Johnny: B-coz everybody enters in it.
Teacher is in trouble while Tom in doubt hearing this answer.
Tom: If bus is female and everybody enters in then y bus do not get pregnant?
Johnny: B-coz all enters from back door.
Teacher is now in deep trouble while Tom becomes more curious.
Tom insists: But driver and the checker enter from front door?
Johnny: You didn’t notice ever!! They wear hat before entering.
